Here's my predicament. I have a two body nuc that I have been taking care of for several months now with little growth noticed. All of a sudden I find that both 5 frame bodies are full. My questions is should I transfer the frames to a 10 frame body and add another or should I just add a third nuc 5 frame body and keep them through the winter and then transfer them in the spring.

I would add a nuc on the bottom rather than on the top. Heat rises, and if they don't fill it out, the empty space would best be on the bottom during the winter.
agreed. I would try and overwinter them in the nucs.
It will be interesting to see if they draw comb in the bottom or not. I am assuming you are giving them foundation.

I didn't think about the heat rising element. I will add some drawn out comb from a hive that I lost earlier due to robbing. That should give them an edge. I am also top feeding.
