The few that I have made were done with a sliding cut off saw or miter saw that allows the depth to be set. Then it was just a matter of bringing the blade down move the board a little and repeat until you have the width you want.
A dado sure would be a lot nicer to use.
I read on another site where it was done as above and then they took a gouge or rounded chisel and scoped out the bottom of the slot if you will to give that nice transition.
