honey wine vinegar

In the most recent issue of American Bee Journal (ABJ) a letter to the editor mistakenly put many resrictions on the making and selling of Honey wine vinegar. Apparently this person was under the impression the the ATF needed to be involved as well as other stingent requirements when making and bottling HWV.
After consulting several sources I have found the following to be accurate for the state of North Carolina.
1. Up to 200 gallons of Honey Wine may be made and consumed by an individual.
2. The ATF does not need to be involved unless you have exceeded the above limits.
3.Vinegar, being a byproduct of honey wine is not regulated unless the manufacturer of HWV exceeds the above limits.
4. Label clearly what you are selling.
